This is where I post the videos of my cooking adventures. I often try something new, if it works, I post it as a new video. Some recipes are challenging, some easy, some are just plain fun.
Grilled Shrimp seasoned with Chinese Five Spices
If you're curious about the grill, it's currently available on Amazon for around $60. Here's a link:
www.amazon.com/dp/B0CT2WXZR1?th=1
Note: I am not a member of the affiliates program. I don't receive a commission if you purchase the grill.
I call these Chinese Shrimp only because I season them with a spice blend called Chinese Five Spices. It's available in many grocery stores. I did this video mostly to demonstrate my new portable BBQ grill. The shrimp cooks quickly, only about 5 minutes per side, because they are so close to the hot coals. If cooking on a large grill, such as a Weber, more time might be required.

Quick and Easy Stew
Переглядів 7064 місяці тому
I call these "spontaneous stews" because I don't work from a recipe. I just toss the ingredients into a pot and cook them. Using store-bought broth and frozen mixed vegetables makes this meal easy to prepare in a short time. And I really love this stew. It's not only healthy for my type 2 diabetes, it also tastes delicious.
Cream of Spinach Soup
Переглядів 7537 місяців тому
As I state in the video, I am not a fan of cooked spinach, but I like it raw in a salad. This soup is actually delicious, despite the spinach. This is one of the best-flavored soups I ever made. And it's easy to make with simple ingredients - butter, onion, celery, flour, chicken stock, milk and spinach, plus seasoning. Instead of milk, I used a dairy creamer we have here in the States - "half ...
The Most Divine Flautas
Переглядів 1 тис.9 місяців тому
Quoted from a web site: "Serranito's was famous for pumping out literally the most divine flautas known to Isla Vista." When I was a student at the University of California Santa Barbara I ate at Serranito's Mexican Food - often known locally simply as Miguel's. There was something special about the guacamole that I figured out only lately, nearly 40 years later. Serranito's, sadly, is no longe...
Tuscan Beans & Sausage
Переглядів 99610 місяців тому
This simple but flavorful dish can be as easy or as complex as you want. I made my own Italian sausages, but the ones available in the store are good. I started with dry cannellini beans that I soaked and cooked, but you can use the beans available in cans. I used tomatoes from my own garden, but you can use canned tomatoes. With simple ingredients you can make this dish easily and quickly, or ...
Homemade Kielbasa sausages
Переглядів 2 тис.11 місяців тому
Note: See correction below. A friend of this UA-cam channel sent me a link to a Kielbasa recipe and I liked what I saw. I decided to make my own. I have the equipment and I enjoy making sausages. They're fun to make. This recipe might not be truly authentic, if there is such a thing as an "authentic" kielbasa recipe, but the sausages are delicious. Correction: I used the wrong conversion to met...
Shrimp and Pasta, how to make
Переглядів 95811 місяців тому
I have an abundance of tomatoes from my own garden. This was one use I made of them. It's a variation on my Trout with Mushroom and Tomatoes (see below). The dish was easy to make and delicious to eat. I made my own pasta from scratch (see below), but feel free to use a store-bought pasta like spaghetti or linguine. If you don't have access to vine-ripened tomatoes, I think Roma tomatoes are a ...
Bruschetta
Переглядів 775Рік тому
This simple but elegant appetizer (or hors d'oeuvre) is made with only a few ingredients. A very thin layer of anchovy sauce adds a pleasant umami without an offensive fishy flavor. Use more if you really like the flavor of anchovies. I used some recently baked bread (the Italian Sausage Bread) but a baguette would work equally well. According to my food encyclopedia, garlic bread is traditiona...
Italian Sausage Bread

First: I had trouble with this recipe. Some authors never test their recipes. I fixed the problems and the recipe on my web site is correct. Because of the problems, I listed the ingredients below. This rustic bread reminds me of my Italian grandmother's pepperoni bread. It is delicious when buttered and toasted under the broiler. It is as easy to make as any bread, with a few extra steps to in...
Easy Popcorn Chicken
Переглядів 2 тис.Рік тому
This popcorn chicken really is easy to make because I use my Finger Lickin' Chicken coating mix. No long marinade. No egg wash. No frying a few pieces at a time. Just coat and fry. Here is the formula for my coating mix (I make a lot and store it in a jar): 1 teaspoon ground oregano 1 teaspoon chili powder 1 teaspoon ground sage 1 teaspoon dried basil; ground 1 teaspoon dried marjoram; ground 2...
Homemade Cream of Mushroom Soup
Переглядів 1,8 тис.Рік тому
I grew up with canned cream of mushroom soup. I never tasted an original; so, when a friend suggested I make my own Cream of Mushroom Soup, I thought it was an excellent idea. This soup has plenty of mushrooms and a mild, delicate flavor. Unlike a stew, which is a meal unto itself, this would make a great starter for a holiday feast. It doesn't take long to make and it requires only one pot. It...
Chicken Parmesan
Переглядів 1,7 тис.Рік тому
This is a slight variation, and better version IMHO, of the Chicken Parmigiana I did three years ago. Using good homemade pesto rather than fresh basil made all the difference. Having a good method to flatten the chicken helped too. I used my tortilla press. Chicken Parmesan is a classic and iconic dish that came out of Italian American cuisine. According to Wikipedia, it might have derived fro...

Thanks for letting me know about this problem. I changed the link. Try it now. It works for me. -Dennis
Great video
water content far to much first time ended with a pancake all over the counter
BlBingo Bango that looks delicious
Finaly someone who make sure european people dont have to convert inch or fahrenheit to cm/celcius. Thanks!
Wonderful video! Thank you! I am always on the hunt for BEEF sausages. Tough to find in our area; they all seam to have pork in them, and weird spices. Your recipe sounds wonderful! Love the sausage pressing machine!! About the meat grinder: My husband, when he’s getting to the last of the meat to be ground, will put dry fresh bread pieces through the grinder. It pushes out all of the last bits of meat, and it’s easy to spot when it comes out of the grinder, for him to stop it. Should a couple of pieces of the bread happen to get into the ground meat, it’s not a problem. xoxox e. N.B. 🇨🇦
It's been hot, would you make a video using your sun oven?
Thanks for the interest. I no longer have it. A friend lost his job and home and needed a way to cook without a kitchen.
thank you !!!
Thanks for the great tip on the creamy guac.
I just found you on YT. I appreciate the way you explain things and the logical reasons for ingredients, etc. Easy to follow with no nonsense. (Funny I should say that, being nonsensical, myself.) I've subscribed and look forward to viewing more of your vids.Thanks.
FABULOUS Recipe 💖 Gloria Leese

Maybe because you never smoked the chicken the soya taste was stronger? am guessing am no expert.
They got that name because they look like the hats the WWI soldiers wore. In fact, the soldiers themselves became to be known as "doughboys," over time. This information came to me as a child from my grandfather, who was in the war. For once, I can't entirely say I care about the accuracy of his statement so long ago. But, he was there. So, I believe him.
With canned fruit for the ice cream do you need to drain the juice from the fruit?
Good question. I never tried it. It depends on whether or not the liquid will freeze. Put a little liquid in a container and place in the freezer. If it turns to ice, you can probably use it in the ice cream. If I were to do this, I'd put the juice in the ice cream mix first and stir the fruit in at the end of the process; otherwise, it might jam the ice cream maker or get all mashed up.
For many years my husband won't eat canned biscuits since I first made then from scratch. As soon as he notices what I'm doing he get really happy.
just read your blog for today - i can hardly wait to hear how that scooter thingie works out - looks like so much fun!!!!!!! And these lego-style kits you are assembling are so detailed - who knew? I’m loving the pics of them that you ar3 sharing with us!!!
Thanks Nancy. I'm really looking forward to getting that scooter. The lego-style kits are kind of fun. I look forward to putting them outside for the neighborhood kids to find. More pics to come. -Dennis
Would love a printable recipe for all of your creations!
They're all on my website: www.white-trash-cooking.com/recipes/spontaneous_stew.html Every recipe has a printable PDF. Enjoy. -Dennis
Oh my gosh thank you for sharing this recipe they look so good, going to make them. All the best.👌👌👍👍
Hello I just want to say that I made these clam cakes with the yeast and they were the best, they are quick and easy. Thank you again for sharing.👍👍👍👍
40 dollar's a bottle now
Yes it did
just wanted to say hi - it’s been months since i’ve sent you a friendly hello. I’ve been traveling down and back the east coast to help an elderly woman with a transition to assisted living. I’ve still been enjoying your videos and blogs (really helps with the stress level). Love your glue tips and tricks today. Looking forward to more time home and thus more time to ask about the tomatoes, more legos and political commentary. Until next time….
Thanks for contacting me Nancy. It's good to hear from you. As you've been seeing in my blogs, everything is continuing much the same. I'm having lots of fun building LEGO kits and leaving them outside where the neighborhood children can find them. Take care of yourself during those East Coast trips. It's good you're helping someone out. -Dennis
I have been making link sausage for over 10 years. The price of casings has skyrocketed over the past few years. I would bite the bullet and use the sheep casings as I like that size. I soak my casings overnight and the casing will slide on easier if you have just a bit of sausage sticking out of the tube. Doing that also forces out the unwanted air. Dude cook the eggs in that sausage grease.
Sausage is called bangers in England because when cooking the sausage the casings split and go bang. Or so I was told by a Londoner.
Wow your spices are almost exactly what I use. Have you tried chicken broth instead of water? I call the texture slushy. Natural casings are the best. They require some cleaning and an overnight soak. I don't care what the instructions say. I have been making chicken and pork sausage for years. Your video was excellent. I just need some jalapeno and serrano peppers in mine.
Love that baking dish where did you get it?
Alas, it was made by a local artisan. There is a flaw on the underside, thus I bought it at a very low price. One of a kind.
I came for the shining look ...just fantastic! Thanks a lot!
Fantastic! Thanks for sharing!
ROCKY POINT!!!!!!!! HEY!!! Born In Westerly! Been there many times, Live In FL now and these people have NO CLUE lol.
I love the simplicity of this recipe. Running out to get the Five Spice.
Hope you enjoy.
Hello Dennis! How great to see a new video from you. I hope you are doing well. The shrimp looks very tasty.
Thanks Mea. Somehow I missed this one. Yes, I am doing well. I just had my eyes checked; no retina issues caused by the type 2 diabetes. That was the best news of the day. Thanks for the comment. -Dennis
Good to see another one of your videos. It's been awhile.
Thanks Bob. Yes, I've been slowing down a little, but still chugging away. -Dennis
It's 2024 , it looks delicious. You are a legend 👏🎉
I love brussel sprouts also and of course shrimp and I always have 5 spice in the cupboard so I'll have to give this a try! Nice to see you again!
Great video. Always good to see you Dennis.
Thanks 👍
Yay!!! You're back!!! What a nice surprise to find your video in my subscription feed. Can't wait to make this. Just gotta get the shrimp. ❤😂
Thanks. I hope you like it. It's really basic, but good. -Dennis
Always great to see you Dennis !
Thanks. I appreciate that. -Dennis
Always great to see you, Dennis and I never leave one of your videos without learning something. Thanks for that! Scott
Thankfully we're not too old to learn something new. -Dennis
You make me hungry 😋
Yeah. Good cooking videos will do that. I'm glad mine was good enough. -Dennis
Five Spice and Garlic Granules get plenty of exercise in my kitchen. Love to see that you use raw shrimp [In parts of the world with less availability, those might be labelled 'King Prawns' and cost a packet]. I used to go shrimp catching in the tidal rock pools on the costal summer home of my grandparents in Ceredigion, a blessing for having had access to 'just caught' shrimp for many years, but a curse having moved away and now only ever get inferior to that. All that said, on the topic of frozen v fresh, well, I recommend FROZEN when it comes to shrimp you aren't catching same day yourself. Why ? Because you can keep them handy and they dont take long to defrost, whereas fresh ones NEED using fast and you'll have to home freeze them anyway otherwise, whereas the trawler cryo/blast frozen ones are MUCH better after defrosting, some frozen are 'torn' [flesh] by the larger crystals formed in slow domestic freezing, so you really have only one choice of texture in your dish [mushy] . I like some bite to a shrimp, a bit like a good beef frank has a 'snap' to it, so, tp the bite at least, does a properly cooked fresh Shrimp / 'King Prawn'. I fully endorse the five spice on Shrimp / Prawn / Langoustine. I like to throw down some granulated garlic and occasional MSG [I don't care what anyone says, it can be pinched into a dish in small quantities, just like any other seasoning, you just need to use it sparingly, because you can't take it back out and like salt/chillis/garlic/lemon juice, things can lift a dish immensely without being unhealthy to speak of, or leave your dish overwhelmed by it/them. Now I watched this, I'm gonna defrost some 'King Prawns' [shhh] and do my own throw down Chinese style shrimp. I used to work in a Chinatown, so have tasted 'authentic' dishes and I'll say, without hesitation, that frozen and dried ingredients can produce excellent results ... in talented hands. I once did a Chow Mein style dish using dried packet noodle and canned Bamboo Shoots, Water Chestnuts, Beansprouts, etc, Jar seasonings [including FIVE SPICE] and left over, skinned, barbequed chicken as protein [from yesterday and 'just' cooked ]. It went down legendarily, because 'we' were MILES out in Scotland's wilderness 'Dark Sky' park [Astronomy/Archaeoastronomy trip] and definitely wouldn't have been able to order a delivery of ANY kind. My point in relation to this upload is, that you can do a FINE job, to your OWN tastes, using long store ingredients and seasonings without breaking the bank and with practice, you might actiually fool folks that the stuff you made must have been an ordered in 'cheat' and I've certainly had the reaction that a camp site Chow Mein [ish] dish, was 'better' than their regular local take away. Some Chinese recipies are very easy to learn, use low cost ingredients and are HEALTHIER for you. @Mobile Home Gourmet, thanks AGAIN, for making me hungry after viewing one of your uploads.
A lot of information, but so accurate and worth reading. Flash frozen seafood like shrimp and scallops are excellent, especially when frozen at sea soon after catching. Thanks for the good comment. -Dennis
Beautiful cook, perfectly done. Thats a great little grill and the bags of coal from Costco will last well. Glad you had a side of my all time favorite sautéed veggies 😂
Thanks Jake. I was sure you'd appreciate the Brussels sprouts. And now with two large bags of briquettes I probably have enough to last all summer - I use so little in the grill. -Dennis
Good to see you!🎉🎉🎉
Thanks. I appreciate the positive comment. -Dennis
I love brussels sprouts too! Especially with bacon :)
Thanks. Cooked correctly, they really are delicious. And, yes, I agree about the bacon. -Dennis
As a former Hotel Food and Beverages Manager, I endorse this as good taste. A simple combination, inexpensive to make, but delicious.
Thanks for the endorsement. As someone with type 2 diabetes, I appreciate the health advantage too. -Dennis
Living next to railways is usually open land, quiet areas. That's a good thing, IMO. Do more videos sir 😅😅😅
Yes, it is fairly quiet out this way, except there is also an airport close by and sometimes the jets go overhead rather than out over the ocean where they're supposed to fly. -Dennis
I love soup too. I am German, living in the UK and I could not find the frozen packs of cream of spinach here in the UK. So I make it myself. As a kid, we had it with fish fingers and boiled potatoes with some butter and of course creamed spinach. It is so easy to make. I never thought of making a soup with creamed spinach. I will try it.
I made your Baileys Irish Cream. So good! This looks delicious too, I clicked on cuz I like to cook and also live in a mobile home ❤
Hello Dennis! I’ve been watching your videos since the pandemic 2019, and it’s really been such a blessing to watch your videos. You have a very peaceful spirit and I love how you cook! Keep sharing your delicious recipes ❤
Thank you for the encouragement. If everything goes according to plan I'll video shrimp on my new compact BBQ this afternoon. -Dennis
